Fire Roasted Chicken: Why the Slow Roast Changes the Bird

Roasting a chicken over fire is a slower proposition than grilling one, and the difference is the whole point. A grill cooks fast and hard on the surface. Fire roasting works the other way around, giving the bird time to render and baste itself while the skin tightens and colours, so the meat stays juicy instead of tightening up. Our Menu describes the way we handle it in a single line that covers both versions we serve: juicy, slow-roasted chicken seasoned with a special blend of herbs and spices. That is the dish, and everything below is about how to order it.

What Fire Roasted Chicken Means at Kingdom BBQ

The kitchen puts it plainly on the menu pages. Our masters treat every cut like a jewel, fire-roasting them with respect to tradition and time. Time is the operative word for chicken. Nothing about a slow roast can be hurried without showing up in the texture, which is why this sits in its own menu category rather than beside the grilled steaks. The seasoning is a herb and spice blend rather than a sauce, so what you taste is the chicken and the fire rather than something poured over the top afterwards. If you have had our picanha or the beef ribs, you already know the approach. Real fire, bold seasoning, and no shortcuts on the clock.

Half or Whole, and How Many Sides

Two portions, and the choice is genuinely about appetite rather than upsell. The Half Roast Chicken, Meio Frango Assado on the Portuguese side of the menu, is half a juicy slow-roasted bird. The Whole Roast Chicken, Frango Assado Inteiro, is the full one and is built for more than one person. Either portion comes with your choice of one, two or three sides, and that is where the plate becomes Brazilian rather than generically roasted. The regular tier covers the classics, including white rice, farofa, green beans, corn bread and a fresh vinaigrette. The special tier brings the beans and the fried yuca and plantain. The premium tier is where baião de dois and Brazilian tropeiro beans live. Rice, beans and vinaigrette is the pairing our own menu recommends alongside fire-roasted meat, and it is the safest first order if you are new to the cuisine.

Ordering Chicken for a Table, Not Just a Plate

A whole roasted chicken is one of the few things on a BBQ menu that scales without any planning. It carves at the table, it travels well, and it suits people who are not all ordering steak. For anything bigger than a family dinner there are two separate routes, and they are not the same service. Group Order handles office lunches, family celebrations and larger gatherings ordering together from the regular menu. Catering is the full customizable service we bring to an event, and we ask for one to two weeks of notice so the menu and the volume can be prepared properly. If you are deciding between them, the question is whether people want their own plates or whether you want the fire-grilled spread delivered as one setup.

Frequently Asked Questions

What is fire roasted chicken?

It is chicken cooked slowly over fire rather than seared fast on a grill. The longer, gentler heat lets the bird render and baste itself, so the meat stays juicy while the skin colours and tightens. Ours is seasoned with a blend of herbs and spices rather than finished with a sauce, and it comes as either a half or a whole bird. Both are on our Menu.

How much is the roast chicken?

It depends on two choices: whether you order the half or the whole bird, and how many sides you add, since each portion can come with one, two or three. Current pricing for every combination is listed on the roast chicken section of our Menu, and you are welcome to call (407) 420-0116 if you would rather talk it through before ordering.

Can I order a whole chicken for a group?

Yes, and it is one of the easiest things on the menu to share, since a whole bird carves at the table and travels well. For a larger crowd there are two options. Group Order lets everyone order together from the regular menu for office lunches and family celebrations. Catering is the full service we bring to your event, and we ask for one to two weeks of notice.
